Ingredients:
Basmati Rice - 2 cups
Carrot / gajar - 1
Celery sticks - 2
( Other vegetables like Capsicum, Cabbage, snap peas, green beans, corn, peas, asparagus etc can also be added.)
Egg scrambled - 2
Ground Pepper- 2 tblsp
Soy sauce - as needed
Boneless skinless chicken- as needed
Salt - to taste
Ginger Garlic paste - 2 tsp
scallions(green onion)/pyaz ki patthi - 1 bunch
Method:
Cook the rice seperately(1 cup rice : 1.5 cup water ratio) Chop the carrot and celery sticks . Blanch the chicken and shred it.
In a wok add little butter add ginger garlic paste and fry the shredded chicken Remove the chicken from wok now add little more butter fry the chopped carrot with salt and pepper.
After removing the carrot, fry the chopped celery with butter ,salt and pepper. Similarly fry the green onions with little butter and keep aside. Now in the same wok fry the rice ,little soy sauce and add the fried chicken, scrambled egg, carrot, celery and green onions and fry all together(add salt and pepper as per taste).
Take care to blend all the ingredients together.
Serve hot.

Ingredients:
4 small or 2 large Honeydew Melons (Kharbooza)
1/2 cup strained fresh Orange Juice (Santra Ka Ras)
1/4th cup fresh Lemon Juice (Nimbu Ka Ras)
4 drops Khus Essence
Method:
If using small melons, slice off the top of each as a lid, if using large melons, cut them into half.Cut the edges into zigzag pattern.Cut a thin slice off the bottom so that the melon stands upright without tipping (take care not to cut through the shell). Scoop out the seeds and discard.Scoop out the flesh and process in a blender, along with the remaining ingredients, until smooth.
Chill and serve in the shells, if desired, with reversed lids and a straw.

Ingredients:
3 tblsp unsalted raw Pistachio (Pistha)
31/2 cup Milk (Doodh)
6-8 Saffron (Zafran/Kesar) threads
2 tblsp Sugar (Cheeni)

Method:
Cut 4 pistachios (pistha) into silvers and set aside.Place the remaining in a blender, cover, and pulse several time to coarsely grind.Add 1/2 cup milk and blend until smooth.Scrape down the sides of the jar with a spatula to free the nuts.
Slowly add another 1 cup milk and blend for 1/2 minute.Place the nut milk, remaining milk and saffron in a heavy- bottom pan over high heat.Stirring constantly, bring to full boil.Froth the milk two more times, then remove it from the flame and stir in a sweetener until dissolved. Place the strainer over the blender and pour in the milk.Partially cover and blend, starting at the low speed and increasing it to high, until the milk is frothing.
Pour into cups, sprinkle with pistachio silvers, and serve .

Ingredients:
1/4th cup blanched Almond (Badam)
2 cup Milk (Doodh)
1/4 tsp Cardamom (Ilaichi)seeds
3 tblsp Honey (Shahad)
Method:
Place the nuts in a blender and process until finely chopped.Add 2/3 cup mil and process until smooth paste.Pour the milk into a heavy-bottomed pan and whisk the remaining milk.Place the milk over moderately high heat and, stirring constantly, bring it to full boil.Remove the pan from the heat, add cardamom seeds.Place the pan over high heat and bring to boil.Remove the pan from the heat and add honey.Again place the pan over heat and bring the milk to just boiling point, pour it in the strainer resting over a pan. Pour the milk back and forth from one pan to another for at least a minute or until frothy.Pour into warmed mugs and serve at once.

Ingredients:
2 apple (seb)
2 glass milk (doodh)
2 tbsp sugar
4 green cardamom (hari ilaichi)
ice as required
Method:
Peel apple and cut in small pieces.Now blend milk, sugar and apple in a mixer.
Grind elaichi to a powder and mix in the shake.Now pour shake in the glasses.
Put some crushed ice and serve it chilled.

Ingredients:
Chicken - 1 lb (1/2 kg)
Onion/pyaz - 1/2 ( diced in medium sized pieces)
Red Chilly/lal mirch powder - 1 tsp
Black Pepper /kali mirch powder - 1 tsp
Coriander/dhania powder - 2 tsp
Turmeric/haldi powder - ¼ tsp
Garam masala powder -¼ tsp
Yogurt(curd/dahi) -2 tsp
Ginger /adrak garlic paste -1 tsp
Salt/namak - to taste
Oil - 2 tsp
Coriander leaves/hara dhanya - (for garnishing)
Method:
Wash and cut chicken in small pieces.Take a bowl mix chilly powder, pepper powder, coriander powder, turmeric powder, salt, garam masala, ginger garlic paste, yogurt and make a paste. Add the chicken pieces to it and rub the masala on the chicken. Let this marinate for at least an hour in the refrigerator.Now heat oil in a kadai and saute the chicken. Cover and cook it for 7 minutes or until it is thoroughly cooked.Open the lid and fry on medium high flame for about 6 minutes or until all the water evaporates. Add onions and fry for 2 more minutes. Garnish with coriander leaves, split chillies and lemon or tomato slices .
